Manjar de Coco is a traditional Brazilian Coconut pudding with prunes syrup.
1 L of full cream milk
1 can of condensed milk
1 can of coconut milk
1 can of reduced fat cream 250ml
1 cup of cornflour
In a blender mix all the ingredients
Put the mixture in a pot and cook for 20 minutes always steering. it will get thicker and form a cream.
Place the cream in a wet tube tray and allow it to cool down for 30 minutes
Than take it to the fridge for one hour or until it get firm.
1 cup of sugar
2 cup of water
200 gr of pitted prunes
Place the sugar in a pot to caramelized a little in the stove.
Add the water and the prunes and leave it cooking for 20 minutes.
Wait it to get cold.
Take the pudding from the tray and cover it with the prunes syrup.
