Bolinho de Arroz (or rice cake) are similar to arancini, but with little differences. It is very popular finger food in Brazilian culinary and also an excellent way to reuse the leftover rice. Here is a recipe.
2 cups of cooked rice
1/2 cup of Parmesan
1/2 cup of milk de leite
2 soup spoon of chopped coriander
1/2 cup of cornflour
1/2 cup of self raising flour
Oil for deep fry
In a bowl mix all the ingredients to form a don
With a help of a spoon make bolls
Deep fry the rice bools in a deep fried at 180° C until get a golden color
Take from the deep fryer an put on a bowl.
